Beer Battered Fish with Dilly Tartar Sauce
Light and crispy beer-battered fish served with a flavorful homemade tartar sauce, perfect with a side of malt vinegar and lemon wedges.

Ingredients
- 0.5 cup mayonnaise I use Hellman's
- 2 cloves garlic grated
- 2 tablespoons shallot finely chopped
- 2 tablespoons capers coarsely chopped
- 1.5 tablespoons fresh dill finely chopped
- 2.5 teaspoons sweet relish
- 2 teaspoons dijon mustard
- 1.5 teaspoons caper brine
- 0.5 teaspoon kosher salt or to taste, I use Diamond Crystal
- 1.5 teaspoons lemon juice
- 0.25 teaspoon black pepper
- 1 lb cod fillet cut into 3-inch pieces
- 0 kosher salt
- 0 black pepper
- 1 cup flour
- 0.5 teaspoon baking powder
- 0.75 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.5 teaspoon old bay seasoning
- 0.5 teaspoon paprika
- 1.25 teaspoons kosher salt Diamond Crystal brand
- 1 cup Mexican lager I use Modelo
- 0 neutral oil for frying
- 0 kosher salt for seasoning
- 0 lemon wedges
- 0 malt vinegar
- 0 French fries
Instructions
- Combine the mayonnaise, grated garlic, finely chopped shallots, coarsely chopped capers, finely chopped dill, sweet relish, dijon mustard, caper brine, kosher salt, lemon juice, and black pepper in a bowl. Stir until smooth.
- Season the cod fillet pieces with salt and black pepper.
- In a bowl, whisk together flour, baking powder, garlic powder, onion powder, Old Bay seasoning, paprika, and kosher salt.
- Slowly whisk in the cold Mexican lager until the batter is smooth. Add more beer for a thinner consistency if desired.
- Heat the oil in a deep pan to 350°F. Dip the seasoned fish pieces into the batter, letting any excess drip off, then carefully place them into the hot oil.
- Fry the fish until golden and crispy, about 4-5 minutes per side. Remove and let drain on paper towels. Season with additional kosher salt if desired.
- Serve the fried fish with dilly tartar sauce on the side. Accompany with lemon wedges, malt vinegar, and your choice of French fries.
