Garlicky Soy Chicken Rice

A simple and delicious Chinese-style one-pot chicken dish with beautifully infused garlic and soy flavors. Serve it with a fried egg for a complete meal that's both quick and satisfying.

Garlicky Soy Chicken Rice

Ingredients

  • 300 g Basmati rice
  • 450 ml boiling water
  • 1 cube chicken stock cube
  • 2 tbsp rice wine
  • 2 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sriracha
  • 2 tsp light soy sauce
  • 2 tsp sesame oil
  • 2 cloves garlic grated
  • 4 fillets chicken thigh fillets
  • 4 pieces spring onions finely chopped
  • 0 chilli oil
  • 2 eggs fried eggs optional

Instructions

  1. Add the Basmati rice to a saucepan.
  2. Whisk the boiling water with the chicken stock cube until dissolved.
  3. Add rice wine, oyster sauce, dark soy sauce, sriracha, light soy sauce, sesame oil, and grated garlic to the stock.
  4. Pour the prepared sauce over the rice and place chicken thigh fillets on top.
  5. Bring the stock to a boil over medium heat. Cover the pan; reduce the heat to low and cook for 20 minutes.
  6. Remove from heat and let it stand for 5 minutes. Add spring onions and drizzle with chili oil.
  7. Serve immediately with fried eggs if using.
