Garlicky Soy Chicken Rice
A simple and delicious Chinese-style one-pot chicken dish with beautifully infused garlic and soy flavors. Serve it with a fried egg for a complete meal that's both quick and satisfying.

Ingredients
- 300 g Basmati rice
- 450 ml boiling water
- 1 cube chicken stock cube
- 2 tbsp rice wine
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tbsp sriracha
- 2 tsp light soy sauce
- 2 tsp sesame oil
- 2 cloves garlic grated
- 4 fillets chicken thigh fillets
- 4 pieces spring onions finely chopped
- 0 chilli oil
- 2 eggs fried eggs optional
Instructions
- Add the Basmati rice to a saucepan.
- Whisk the boiling water with the chicken stock cube until dissolved.
- Add rice wine, oyster sauce, dark soy sauce, sriracha, light soy sauce, sesame oil, and grated garlic to the stock.
- Pour the prepared sauce over the rice and place chicken thigh fillets on top.
- Bring the stock to a boil over medium heat. Cover the pan; reduce the heat to low and cook for 20 minutes.
- Remove from heat and let it stand for 5 minutes. Add spring onions and drizzle with chili oil.
- Serve immediately with fried eggs if using.
