Smoky Chicken Skewers With Garlic Yogurt Marinade & Tangy Herb Oil

Cook time: 30 minutes

Servings: 4

Ingredients

  • 0.67 cup Greek yogurt
  • 1 whole lemon
  • 4 cloves garlic
  • 1.5 teaspoon ground cumin
  • 1.5 teaspoon smoked paprika
  • 1.5 teaspoon dried oregano
  • 1.5 teaspoon Aleppo pepper
  • 1.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1.5 tablespoon honey
  • 2 tablespoon extra virgin olive oil
  • 2 pounds boneless, skinless chicken thighs
  • 1 cup Tangy Herb Oil

Instructions

  1. In a large bowl, whisk together Greek yogurt, lemon zest and juice, garlic, cumin, smoked paprika, oregano, Aleppo pepper, salt, pepper, honey, and olive oil until smooth and well blended.
  2. Add chicken and toss until fully coated.
  3. Cover and refrigerate for at least 1 hour, but honestly the longer it marinades the better it will be!
  4. Thread chicken onto skewers.
  5. Heat grill or grill pan over medium-high.
  6. Cook skewers 4–5 minutes per side, until charred and cooked through (internal temp: 165°F).
  7. Drizzle with tangy herb oil while the skewers are still hot to make it next level!
  8. Serve with a cauliflower tabbouleh for the perfect summer meal!
