Crispy Pasta Caesar Salad
A delightful combination of crispy pasta and Caesar salad with chicken and a creamy sauce.

Ingredients
- 250 g short pasta
- 2 tbsp olive oil
- 0.25 tsp salt
- 0.25 tsp black pepper
- 0.5 tsp garlic powder
- 1 tbsp smoked paprika
- 250 g chicken breast
- 1 tbsp butter
- 1 tbsp paprika
- 0.5 tsp oregano
- 0 to taste salt
- 0 to taste black pepper
- 2.5 cups romaine lettuce
- 0.5 cucumber
- 1 small red onion
- 1 handful fresh parsley
- 3 tbsp plain yogurt
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 4.5 garlic clove
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp grated parmesan
- 100 g grated parmesan
Instructions
- Cook the pasta according to package instructions.
- Drain and let the pasta steam dry completely.
- Preheat the oven to 200 °C (390 °F) fan/ventilated heat.
- Spread the pasta evenly on a baking sheet, toss the pasta with olive oil, and add the seasoning.
- Bake for 25-30 minutes until golden and crispy.
- Cut the chicken into small cubes.
- Heat a pan with olive oil, add chicken, paprika, oregano, salt, and pepper.
- Chop romaine lettuce, parsley, cucumber, and the red onion.
- In a bowl, whisk together yogurt, mayonnaise, Dijon mustard, garlic, lemon juice, olive oil, salt, pepper, and parmesan until very smooth and creamy. Taste and adjust, add a little more yogurt or mayo if you want it richer.
- In a large bowl, combine chicken, lettuce, cucumber, onion, and parsley. Pour the creamy sauce over and toss gently.
- Top with the crunchy oven-baked pasta and extra parmesan.
- Serve immediately for maximum crunch and creaminess.
