Coconut Curry Dumpling Soup

Ingredients

  • 1 tbsp olive oil
  • 2 whole green onions
  • 0.5 tbsp Thai red curry paste
  • 1 clove garlic
  • 1 cup chicken stock
  • 1 tsp sugar
  • 1 from 1 lime lime zest
  • 1 from 1 lime lime juice
  • 0.25 tsp red pepper flakes
  • 1 can coconut milk
  • 1 to taste salt
  • 1 to taste pepper
  • 2 boxes soup dumplings
  • 2 whole baby bok choy
  • 1 to taste cilantro
  • 1 to taste green onions
  • 1 to taste chili oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the whites of the green onions, Thai red curry paste, and minced garlic. Cook until fragrant.
  2. Add chicken stock, sugar, lime zest, lime juice, and red pepper flakes to the pot. Simmer for 4-5 minutes.
  3. Add coconut milk, salt, and pepper to the pot. Simmer for a few minutes.
  4. Add frozen dumplings and baby bok choy to the pot. Cover and simmer for 5-6 minutes until the dumplings are cooked through.
  5. Garnish the soup with chopped cilantro, sliced green onions, and chili oil before serving.
