Coconut Curry Dumpling Soup

Ingredients
- 1 tbsp olive oil
- 2 whole green onions
- 0.5 tbsp Thai red curry paste
- 1 clove garlic
- 1 cup chicken stock
- 1 tsp sugar
- 1 from 1 lime lime zest
- 1 from 1 lime lime juice
- 0.25 tsp red pepper flakes
- 1 can coconut milk
- 1 to taste salt
- 1 to taste pepper
- 2 boxes soup dumplings
- 2 whole baby bok choy
- 1 to taste cilantro
- 1 to taste green onions
- 1 to taste chili oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the whites of the green onions, Thai red curry paste, and minced garlic. Cook until fragrant.
- Add chicken stock, sugar, lime zest, lime juice, and red pepper flakes to the pot. Simmer for 4-5 minutes.
- Add coconut milk, salt, and pepper to the pot. Simmer for a few minutes.
- Add frozen dumplings and baby bok choy to the pot. Cover and simmer for 5-6 minutes until the dumplings are cooked through.
- Garnish the soup with chopped cilantro, sliced green onions, and chili oil before serving.
