Blueberry Baked Oats

When you want cake for breakfast but you still want it to be nutritious, make my blueberry baked oats. Delicious, easy and great for a weekend breakfast or for meal prep. I serve it with Greek yoghurt for extra protein and it keeps me full and satisfied for hours!

Blueberry Baked Oats

Cook time: 35 minutes

Servings: 4

Ingredients

  • 300 g apple puree
  • 2 large eggs or flax eggs
  • 2 tsp vanilla extract
  • 400 ml oat milk
  • 60 ml maple syrup or honey
  • 2 tbsp olive oil
  • 200 g jumbo oats
  • 1.5 tsp ground cinnamon
  • 1 tsp baking powder
  • 0.25 tsp fine salt
  • 200 g fresh blueberries
  • 0 Greek yoghurt
  • 0 walnuts
  • 0 honey

Instructions

  1. Preheat the oven to 180C.
  2. In an oven-safe baking dish, mix the apple puree, eggs or flax eggs, vanilla, oat milk, honey, and olive oil. Mix to combine well.
  3. Add the oats, cinnamon, baking powder, and salt. Mix well.
  4. Add the blueberries and gently mix, making sure to keep a few for the top - it just looks pretty.
  5. Bake for around 35 minutes till the top is golden brown and it’s just set.
  6. Serve with Greek yoghurt, walnuts, and a little extra honey.
