Blueberry Baked Oats
When you want cake for breakfast but you still want it to be nutritious, make my blueberry baked oats. Delicious, easy and great for a weekend breakfast or for meal prep. I serve it with Greek yoghurt for extra protein and it keeps me full and satisfied for hours!

Ingredients
- 300 g apple puree
- 2 large eggs or flax eggs
- 2 tsp vanilla extract
- 400 ml oat milk
- 60 ml maple syrup or honey
- 2 tbsp olive oil
- 200 g jumbo oats
- 1.5 tsp ground cinnamon
- 1 tsp baking powder
- 0.25 tsp fine salt
- 200 g fresh blueberries
- 0 Greek yoghurt
- 0 walnuts
- 0 honey
Instructions
- Preheat the oven to 180C.
- In an oven-safe baking dish, mix the apple puree, eggs or flax eggs, vanilla, oat milk, honey, and olive oil. Mix to combine well.
- Add the oats, cinnamon, baking powder, and salt. Mix well.
- Add the blueberries and gently mix, making sure to keep a few for the top - it just looks pretty.
- Bake for around 35 minutes till the top is golden brown and it’s just set.
- Serve with Greek yoghurt, walnuts, and a little extra honey.
