Gnocchi with Sausage, Veggies, and Gruyere

Ingredients

  • 16 oz gnocchi
  • 8 oz sliced baby Bella mushrooms
  • 10 oz tomatoes
  • 1 large onion thinly sliced
  • 2 cloves garlic grated
  • 1 tsp Italian seasoning
  • 1 tsp rosemary fresh
  • 2 tbsp olive oil
  • 8 oz Jimmy Dean sage sausage half a package
  • 0.75 cup dry white wine
  • 6 oz Gruyere cheese shredded
  • 0 balsamic glaze to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the gnocchi, sliced baby Bella mushrooms, tomatoes, and thinly sliced onion on a large sheet pan.
  3. Grate the garlic over the veggies, and sprinkle with Italian seasoning and fresh rosemary. Drizzle everything with olive oil.
  4. Add the Jimmy Dean sage sausage in small chunks across the pan.
  5. Pour the dry white wine over the pan, ensuring to moisten the gnocchi and veggies.
  6. Roast in the preheated oven for 25-30 minutes or until the sausage is cooked through and the gnocchi is crispy.
  7. Remove the pan from the oven and sprinkle shredded Gruyere cheese over everything.
  8. Drizzle with balsamic glaze before serving.
