Avocado And Pickle Salad

Ingredients
- 425 g canned corn
- 2 avocados
- 1 red onion
- 0.5 cup pickles
- 0 basil leaves
- 100 g feta cheese
- 0.25 cup olive oil
- 0.25 cup rice vinegar
- 1 tbsp kewpie mayo
- 0 pinch salt

Instructions
- Open the can of corn and drain any excess liquid.
- Dice the avocados into small cubes.
- Thinly slice the red onion.
- Dice the pickles into small pieces.
- Roughly chop the basil leaves.
- Crumble the feta cheese. If using marinated feta, drain it first.
- In a small bowl, combine olive oil, rice vinegar, kewpie mayo, and a pinch of salt to make the dressing.
- Add the corn, diced avocados, sliced red onion, diced pickles, chopped basil leaves, and crumbled feta cheese into a large salad bowl.
- Pour the dressing over the salad ingredients in the bowl.
- Mix all the ingredients in the salad bowl until well combined.
- Serve the salad immediately or refrigerate for later enjoyment.
