Honey Mustard & Feta Spring Orzo Salad With Buttery Garlic Shrimp

Ingredients
- 1 package orzo
- 1 handful arugula
- 1 cup snap peas
- 1 cup peas
- 1 small bunch asparagus
- 1 cup feta
- 0.5 cup mint
- 0.25 cup basil
- 1 lemon lemon zest
- 0 to taste salt
- 0 to taste pepper
- 2 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic
- 1 lb shrimp
- 0.25 cup white wine
- 0.5 lemon lemon juice
- 0 to taste salt
- 0 to taste pepper
- 2 tbsp Dijon mustard
- 1 clove garlic
- 0.25 cup mayonnaise
- 1 tbsp basil
- 1.5 tbsp honey
- 1 tbsp red wine vinegar
- 0.5 cup olive oil
- 1 small lemon lemon juice
- 1 small lemon lemon zest
- 0 to taste salt
- 0 to taste pepper
Instructions
- Cook the orzo according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine the cooked orzo, arugula, snap peas, peas, asparagus, feta, mint, basil, and lemon zest. Season with salt and pepper to taste.
- In a skillet over medium heat, melt the butter and add olive oil.
- Add the minced garlic to the skillet and sauté until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.
- Pour in the white wine and lemon juice, and cook for another 2 minutes. Season with salt and pepper to taste.
- To make the dressing, whisk together Dijon mustard, grated garlic, mayonnaise, chopped basil, honey, red wine vinegar, olive oil, lemon juice, and zest in a bowl. Season with salt and pepper to taste.
- Pour the dressing over the orzo salad and toss to combine.
- Serve the orzo salad topped with the buttery garlic shrimp.
