Cowboy Butter Chicken

Ingredients
- 1.5 sticks butter
- 1 medium shallot minced
- 6 cloves garlic cloves minced
- 1 tsp dry thyme
- 0.5 tsp red pepper flakes
- 0.5 tsp smoked paprika
- 0.5 tsp cayenne pepper
- 1 tbsp Worcestershire sauce
- 2 tbsp Dijon mustard
- 0.5 tsp salt
- 2 tbsp fresh parsley chopped
- 2 tbsp green onions minced
- 1.5 pounds chicken
- 1.5 tbsp lemon pepper seasoning
- 1 tsp paprika
- 1 tsp cayenne
- 0.5 tsp salt
- 1 tbsp olive oil
- 2 tbsp olive oil
Instructions
- Prepare the cowboy butter sauce by adding butter to a hot pan, then turning off the heat before it fully melts.
- Add the minced shallot and garlic, along with thyme, chili flakes, smoked paprika, cayenne, Worcestershire sauce, Dijon mustard, and salt to the softened butter.
- Lightly heat the mixture on low for one minute, then remove from the heat. Add fresh parsley and green onions.
- Season the chicken with lemon pepper seasoning, paprika, cayenne, and salt. Coat with olive oil.
- In olive oil, sear the chicken for 3-4 minutes on each side until cooked through. Remove to a plate.
- Brush the cowboy butter over the seared chicken and serve it hot.
