Cowboy Butter Chicken

Ingredients

  • 1.5 sticks butter
  • 1 medium shallot minced
  • 6 cloves garlic cloves minced
  • 1 tsp dry thyme
  • 0.5 tsp red pepper flakes
  • 0.5 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • 0.5 tsp salt
  • 2 tbsp fresh parsley chopped
  • 2 tbsp green onions minced
  • 1.5 pounds chicken
  • 1.5 tbsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp cayenne
  • 0.5 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp olive oil

Instructions

  1. Prepare the cowboy butter sauce by adding butter to a hot pan, then turning off the heat before it fully melts.
  2. Add the minced shallot and garlic, along with thyme, chili flakes, smoked paprika, cayenne, Worcestershire sauce, Dijon mustard, and salt to the softened butter.
  3. Lightly heat the mixture on low for one minute, then remove from the heat. Add fresh parsley and green onions.
  4. Season the chicken with lemon pepper seasoning, paprika, cayenne, and salt. Coat with olive oil.
  5. In olive oil, sear the chicken for 3-4 minutes on each side until cooked through. Remove to a plate.
  6. Brush the cowboy butter over the seared chicken and serve it hot.
