Hot Honey Cottage Cheese Beef Bowl

Ingredients
- 14.11 ounces sweet potato
- 1 tablespoon paprika
- 1 teaspoon cinnamon
- 0 salt
- 0 black pepper
- 1 teaspoon olive oil
- 7.05 ounces lean beef mince
- 0.5 packet taco seasoning
- 0.25 cup water
- 2 tablespoon honey
- 0.5 tablespoon lemon juice
- 0 chili flakes
- 2.11 ounces cottage cheese
- 0.5 avocado
- 0 fresh parsley
Instructions
- Chop the sweet potatoes into bite-sized cubes. Season with paprika, cinnamon, salt, and pepper. Drizzle over the olive oil and mix well.
- Air fry the sweet potatoes at 200° C (392° F) for 20-25 minutes or until crisp and cooked through.
- In a pan over medium heat, add the beef mince and cook until browned.
- Add the taco seasoning to the beef along with a dash of water. Stir well and cook for another 5 minutes.
- Prepare the hot honey by mixing honey, a squeeze of lemon juice, and a pinch of chili flakes.
- Divide the cooked sweet potatoes and taco beef into two bowls. Top each bowl with cottage cheese, sliced avocado, hot honey, and fresh parsley.
