Whipped Feta with Roasted Potatoes and Tomatoes
A delightful side dish or appetizer featuring creamy whipped feta, roasted potatoes, and sweet roasted tomatoes. Topped with fresh parsley and chili-infused olive oil for the perfect blend of flavors.

Ingredients
- 1 pound potatoes chopped
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 pint cherry tomatoes halved
- 8 ounces feta cheese
- 0.25 cup Greek yogurt plain
- 2 tablespoons chili-infused olive oil
- 0.25 cup fresh parsley chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop 1 pound of potatoes into bite-sized pieces.
- Toss the potatoes with 2 tablespoons of olive oil and a pinch of salt and pepper.
- Place the potatoes on a baking sheet and roast for 20 minutes.
- While the potatoes are roasting, halve 1 pint of cherry tomatoes.
- After 20 minutes, add the tomatoes to the baking sheet with the potatoes and roast for an additional 15-20 minutes until both are golden and tender.
- In a blender or food processor, blend 8 ounces of feta cheese with 1/4 cup of Greek yogurt until smooth.
- Spread the whipped feta on a serving dish.
- Top the whipped feta with the roasted potatoes and tomatoes.
- Drizzle with 2 tablespoons of chili-infused olive oil and sprinkle with 1/4 cup of chopped fresh parsley before serving.
