Ingredients
- 1 pound shrimp raw, peeled, deveined, and butterflied
- 6 limes lime juice enough to fully cover the shrimp

- 3 serrano chiles adjust to taste, stems removed
- 0.5 cup cilantro leaves
- 0.25 cup parsley leaves optional
- 0.25 cup cucumber chopped
- 2 cloves garlic chopped
- 2 limes lime juice
- 2 tbsp olive oil
- 0.25 tsp ground cumin optional
- 0 salt to taste
- 0 pepper to taste
- 1 pound shrimp drained
- 0.25 cup lime juice reserved
- 1 cup green aguachile sauce
- 0.5 red onion thinly sliced
- 1 cucumber thinly sliced
- 1 avocado sliced
- 0.25 cup cilantro leaves fresh
- 3 radishes optional, sliced
- 0 tortilla chips for serving
- 0 tostadas for serving
Instructions
- Place the butterflied shrimp in a shallow glass or ceramic dish. Pour the lime juice over the shrimp, ensuring they are fully submerged. Add a pinch of salt. Let the shrimp marinate in the fridge for about 15-20 minutes, or until they turn opaque and are 'cooked' by the lime juice.
- In a blender or food processor, combine the chiles, cilantro, parsley (if using), chopped cucumber, garlic, lime juice, olive oil, cumin (if using), salt, and pepper. Blend until smooth. Taste and adjust seasoning, adding more lime juice, salt, or chile for spiciness if desired.
- Drain the shrimp from the lime juice marinade, but reserve a little bit of the juice. In a large bowl, toss the shrimp with the green aguachile sauce. Add a couple of tablespoons of the reserved lime juice to the mixture to enhance the citrus flavor. Gently mix in the thinly sliced red onion and cucumber.
- Arrange the aguachile on a serving platter or individual plates. Garnish with sliced avocado, fresh cilantro leaves, and radishes if using. Serve immediately with tortilla chips or tostadas on the side.
