Honey Glazed Salmon Bowls

Ingredients

  • 1.5 pounds salmon skin removed, cut into bite-sized pieces
  • 2 tablespoons avocado oil
  • 2 tablespoons honey
  • 3 tablespoons sriracha
  • 0.25 cup soy sauce low sodium or coconut aminos/tamari for a GF option
  • 0 parchment paper
  • 2 cups rice cooked
  • 1 cup cottage cheese
  • 1 lime juiced
  • 0.25 cup sriracha
  • 2 teaspoons cumin
  • 0.5 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon honey
  • 2 Persian cucumbers finely diced
  • 1 avocado finely diced
  • 0.25 cup cilantro
  • 1 lime juiced
  • 1 tablespoon honey

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Coat the salmon in avocado oil, honey, sriracha, and soy sauce.
  3. Transfer salmon to a parchment-lined baking sheet and bake for 10-11 minutes. Broil for 1-2 minutes for a crunchy top.
  4. Cook the rice according to package instructions and set aside.
  5. Blend cottage cheese, lime juice, sriracha, cumin, onion powder, smoked paprika, and honey until smooth to make the spicy sauce. Adjust seasonings to taste.
  6. Prepare the cucumber avocado salad by combining cucumber, avocado, cilantro, lime juice, and honey. Toss well.
  7. Assemble the bowls by adding rice first, followed by salmon bites, cucumber avocado salad, and drizzle the spicy sauce on top. Serve and enjoy.
