Honey Glazed Salmon Bowls

Ingredients
- 1.5 pounds salmon skin removed, cut into bite-sized pieces
- 2 tablespoons avocado oil
- 2 tablespoons honey
- 3 tablespoons sriracha
- 0.25 cup soy sauce low sodium or coconut aminos/tamari for a GF option
- 0 parchment paper
- 2 cups rice cooked
- 1 cup cottage cheese
- 1 lime juiced
- 0.25 cup sriracha
- 2 teaspoons cumin
- 0.5 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 tablespoon honey
- 2 Persian cucumbers finely diced
- 1 avocado finely diced
- 0.25 cup cilantro
- 1 lime juiced
- 1 tablespoon honey
Instructions
- Preheat oven to 400°F (200°C).
- Coat the salmon in avocado oil, honey, sriracha, and soy sauce.
- Transfer salmon to a parchment-lined baking sheet and bake for 10-11 minutes. Broil for 1-2 minutes for a crunchy top.
- Cook the rice according to package instructions and set aside.
- Blend cottage cheese, lime juice, sriracha, cumin, onion powder, smoked paprika, and honey until smooth to make the spicy sauce. Adjust seasonings to taste.
- Prepare the cucumber avocado salad by combining cucumber, avocado, cilantro, lime juice, and honey. Toss well.
- Assemble the bowls by adding rice first, followed by salmon bites, cucumber avocado salad, and drizzle the spicy sauce on top. Serve and enjoy.
