Greek-Inspired Shrimp Bowls with Lemony Yogurt

Ingredients
- 0.25 cup extra-virgin olive oil
- 4 cloves garlic minced
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 2 tablespoons fresh lemon juice
- 1 pound peeled and deveined shrimp large
- 2 medium zucchini chopped
- 2 medium bell peppers chopped
- 1 tablespoon extra-virgin olive oil
- 1 cup long-grain white rice
- 1 cup plain whole-milk Greek yogurt
- 0.5 cup fresh parsley chopped
Instructions
- Prepare the marinade by mixing together olive oil, garlic, paprika, dried oregano, and lemon juice in a bowl.
- Divide the marinade equally between the shrimp and the chopped vegetables.
- Saute the veggies in a pan over medium heat until softened, about 5-7 minutes. Transfer to a bowl.
- In the same pan, add shrimp and cook until golden brown and opaque, 3-4 minutes per side.
- Cook the white rice according to package instructions.
- Assemble the dish by placing rice as the base, adding veggies and shrimp on top. Serve with a dollop of Greek yogurt and garnish with fresh parsley.
