Greek-Inspired Shrimp Bowls with Lemony Yogurt

Ingredients

  • 0.25 cup extra-virgin olive oil
  • 4 cloves garlic minced
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lemon juice
  • 1 pound peeled and deveined shrimp large
  • 2 medium zucchini chopped
  • 2 medium bell peppers chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 cup long-grain white rice
  • 1 cup plain whole-milk Greek yogurt
  • 0.5 cup fresh parsley chopped

Instructions

  1. Prepare the marinade by mixing together olive oil, garlic, paprika, dried oregano, and lemon juice in a bowl.
  2. Divide the marinade equally between the shrimp and the chopped vegetables.
  3. Saute the veggies in a pan over medium heat until softened, about 5-7 minutes. Transfer to a bowl.
  4. In the same pan, add shrimp and cook until golden brown and opaque, 3-4 minutes per side.
  5. Cook the white rice according to package instructions.
  6. Assemble the dish by placing rice as the base, adding veggies and shrimp on top. Serve with a dollop of Greek yogurt and garnish with fresh parsley.
