Fish Tacos with Smoked Cod and Fresh Salsa

Ingredients
- 0.5 piece Red Onion finely diced
- 0 Coriander handful, chopped
- 1 clove Garlic Clove minced
- 2 pieces Tomatoes diced
- 0 Salt
- 1 teaspoon Smoked Paprika
- 0.5 teaspoon Onion Powder
- 0.5 teaspoon Garlic Powder
- 0.5 teaspoon Chilli Powder
- 0 Salt
- 0 Pepper
- 2 pieces Smoked Cod Loins
- 6 pieces Corn Tortillas
- 2 tablespoons Yoghurt
- 1 teaspoon Honey
- 1 tablespoon Lime Juice
- 0 Water a splash
- 2 pieces Avocados smashed
Instructions
- Make the salsa by mixing the finely diced red onion, chopped coriander, minced garlic, and diced tomatoes in a bowl. Season with salt and set aside.
- Heat a pan over medium heat. In a separate bowl, mix smoked paprika, onion powder, garlic powder, chilli powder, salt, and pepper. Coat the smoked cod loins in the spice mix.
- Pan-fry the spice-coated cod loins for 3–4 minutes per side until golden and flaky.
- Warm the corn tortillas in a dry pan or over an open flame to get a slight char.
- In a small bowl, mix yoghurt, honey, lime juice, and a splash of water to make the dressing.
- Assemble the tacos: spread smashed avocado on each tortilla, add flaked fish, top with salsa, and drizzle with yoghurt dressing.
