Chicken Spicy Caesar Schnitzel
Crispy chicken schnitzel paired with a spicy twist on Caesar dressing, featuring Calabrian chilies and Parmigiano Reggiano.

Ingredients
- 1 large egg yolk at room temperature
- 3 cloves garlic smashed
- 2 anchovy filets
- 1.5 tsp dijon mustard
- 0 lemon zest from 1/2 lemon
- 0.5 lemon lemon juice reserve second half
- 0.333 cup Graza Drizzle Extra Virgin Olive Oil
- 0.333 cup avocado oil
- 0.25 tsp worcestershire sauce
- 0.25 tsp black pepper freshly cracked
- 0 kosher salt to taste
- 3 Tbsp calabrian chilis crushed
- 1 Tbsp water plus more to thin
- 2 pieces chicken breasts
- 0.33 cup all-purpose flour
- 0.5 tsp garlic powder plus more to taste
- 0.5 tsp kosher salt Diamond Crystal, plus more to taste
- 0.25 tsp black pepper plus more to taste
- 2 large egg beaten
- 0.75 cup panko breadcrumbs
- 0 Graza Frizzle Olive Oil for frying
- 1 cup parmigiano reggiano freshly grated
- 0 lemon juice additional to taste
Instructions
- Prepare the Caesar dressing by blending egg yolk, garlic, anchovies, dijon mustard, lemon zest, lemon juice, olive oil, avocado oil, Worcestershire sauce, black pepper, and salt to taste in a food processor until smooth.
- Add Calabrian chilies and water to the dressing, blending until well incorporated. Adjust with water to reach desired consistency.
- Season chicken breasts with garlic powder, kosher salt, and black pepper. Coat the chicken with flour, then dip in beaten eggs, and finally coat with panko breadcrumbs.
- Heat Graza Frizzle Olive Oil in a skillet over medium-high heat. Shallow-fry the chicken until golden brown and cooked through, about 3-4 minutes per side.
- Assemble the schnitzel with prepared dressing and grated Parmigiano Reggiano. Squeeze additional lemon juice if desired.
