Banana Pudding Fudgy Matcha Brownies

Ingredients
- 0.5 cup unsalted butter
- 4 oz white chocolate
- 1.5 tbsp matcha powder high-quality ceremonial matcha
- 0.75 cup granulated sugar
- 0.25 cup dark brown sugar
- 0 salt a pinch
- 3 large eggs at room temperature
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 0.5 cup whole milk
- 2 oz vanilla pudding mix
- 2 tbsp sweetened condensed milk
- 0.5 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- Melt the unsalted butter and white chocolate together in a heatproof bowl over a pot of simmering water, stirring frequently until smooth.
- In a separate bowl, combine the matcha powder, granulated sugar, dark brown sugar, and salt.
- Add the melted butter and chocolate mixture to the dry ingredients, and mix until just combined. Add the eggs and vanilla extract, and mix until smooth.
- Fold in the all-purpose flour until just combined. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- While the brownies are baking, whisk together the whole milk, vanilla pudding mix, and sweetened condensed milk in a bowl until smooth. Chill in the refrigerator until ready to use.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chilled banana pudding.
- Allow the brownies to cool slightly before cutting into squares. Serve topped with the banana pudding mixture.
