Banana Pudding Fudgy Matcha Brownies

Ingredients

  • 0.5 cup unsalted butter
  • 4 oz white chocolate
  • 1.5 tbsp matcha powder high-quality ceremonial matcha
  • 0.75 cup granulated sugar
  • 0.25 cup dark brown sugar
  • 0 salt a pinch
  • 3 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup whole milk
  • 2 oz vanilla pudding mix
  • 2 tbsp sweetened condensed milk
  • 0.5 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. Melt the unsalted butter and white chocolate together in a heatproof bowl over a pot of simmering water, stirring frequently until smooth.
  3. In a separate bowl, combine the matcha powder, granulated sugar, dark brown sugar, and salt.
  4. Add the melted butter and chocolate mixture to the dry ingredients, and mix until just combined. Add the eggs and vanilla extract, and mix until smooth.
  5. Fold in the all-purpose flour until just combined. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  6. While the brownies are baking, whisk together the whole milk, vanilla pudding mix, and sweetened condensed milk in a bowl until smooth. Chill in the refrigerator until ready to use.
  7. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chilled banana pudding.
  8. Allow the brownies to cool slightly before cutting into squares. Serve topped with the banana pudding mixture.
