Parchment Cod & Veggies

Ingredients

  • 1 small Potato cut into super thin slices
  • 1 handful Asparagus
  • 1 fillet Cod Fillet
  • 0 Garlic Powder
  • 0 Onion Powder
  • 0 Paprika
  • 0 Salt
  • 0 Black Pepper
  • 1 tbsp Olive Oil
  • 1.5 tsp Lemon Juice
  • 1 tbsp Mayonnaise
  • 0.5 tbsp Spicy Dijon Mustard
  • 1 tbsp Chopped Parsley
  • 0 Chopped Parsley
  • 0 Parmesan Cheese

Instructions

  1. Preheat your air fryer to 350°F or oven to 375°F.
  2. Slice the potato into super thin slices using a mandoline or sharp knife.
  3. On one side of the parchment paper, layer the potato slices, asparagus, and cod fillet.
  4. Season the layered ingredients with garlic powder, onion powder, paprika, salt, and pepper to your liking.
  5. In a small bowl, mix together olive oil, lemon juice, mayonnaise, spicy Dijon mustard, parsley, and a pinch of salt to make the sauce.
  6. Drizzle the sauce over the layered ingredients, then fold the parchment paper over the fish and vegetables as shown in the video.
  7. Air fry at 350°F for 20-25 minutes or bake at 375°F for about 25 minutes, until the fish is thoroughly cooked and the vegetables are tender.
  8. Garnish with additional chopped parsley and grated Parmesan before serving.
