Parchment Cod & Veggies
A heart-healthy dish full of flavor and nutrition, featuring tender cod with thinly sliced potatoes and asparagus, drizzled with a tangy sauce.

Ingredients
- 1 small Potato cut into super thin slices
- 1 handful Asparagus
- 1 fillet Cod Fillet
- 0 Garlic Powder
- 0 Onion Powder
- 0 Paprika
- 0 Salt
- 0 Black Pepper
- 1 tbsp Olive Oil
- 1.5 tsp Lemon Juice
- 1 tbsp Mayonnaise
- 0.5 tbsp Spicy Dijon Mustard
- 1 tbsp Chopped Parsley
- 0 Chopped Parsley
- 0 Parmesan Cheese
Instructions
- Preheat your air fryer to 350°F or oven to 375°F.
- Slice the potato into super thin slices using a mandoline or sharp knife.
- On one side of the parchment paper, layer the potato slices, asparagus, and cod fillet.
- Season the layered ingredients with garlic powder, onion powder, paprika, salt, and pepper to your liking.
- In a small bowl, mix together olive oil, lemon juice, mayonnaise, spicy Dijon mustard, parsley, and a pinch of salt to make the sauce.
- Drizzle the sauce over the layered ingredients, then fold the parchment paper over the fish and vegetables as shown in the video.
- Air fry at 350°F for 20-25 minutes or bake at 375°F for about 25 minutes, until the fish is thoroughly cooked and the vegetables are tender.
- Garnish with additional chopped parsley and grated Parmesan before serving.
