Best Fruit Combo Peach Blueberry Crumble Cake

Ingredients
- 150 g all-purpose flour
- 35 g granulated sugar
- 60 g brown sugar
- 1 tsp cinnamon
- 0.5 tsp salt
- 70 g unsalted butter cold, cubed
- 350 g peach sliced
- 28 g granulated sugar
- 75 g whole milk
- 80 g whole milk yogurt
- 2 egg
- 2 tsp vanilla extract
- 105 g unsalted butter melted
- 225 g granulated sugar
- 255 g cake flour
- 2 tsp baking powder
- 0.5 tsp salt
- 100 g peach diced
- 130 g blueberries
Instructions
- In a medium mixing bowl, combine 150g of all-purpose flour, 35g of granulated sugar, 60g of brown sugar, 1 tsp of cinnamon, and 0.5 tsp of salt using a whisk.
- Add 70g of cold unsalted butter, cubed, to the dry ingredients and use your hands to crumble the mixture together. Set aside.
- In a skillet, add 350g of sliced peach and 28g of granulated sugar. Cook for about 5 minutes until tender and syrupy. Remove from heat and set aside.
- Preheat the oven to 425°F (218°C). Line a baking pan with paper liners or lightly grease it with cooking spray.
- In a large mixing bowl, whisk together 75g of milk, 80g of whole milk yogurt, and 2 eggs. Stir in 2 tsp of vanilla extract.
- Gradually add 105g of melted unsalted butter and 225g of granulated sugar to the milk and egg mixture, stirring until combined.
- Add 255g of cake flour, 2 tsp of baking powder, and 0.5 tsp of salt. Fold in the dry ingredients until just combined.
- Gently fold in 100g of diced peach and 130g of fresh blueberries with a spatula.
- Pour the batter into the prepared baking dish, spread it out evenly, and top with the cooked sliced peaches. Sprinkle the crumble topping evenly over the cake batter.
- Bake at 425°F (218°C) for 13 minutes, then reduce the temperature to 360°F (182°C) and bake for an additional 35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Allow the cake to cool slightly before serving. Enjoy your peach blueberry crumble cake!
