Best Fruit Combo Peach Blueberry Crumble Cake

Ingredients

  • 150 g all-purpose flour
  • 35 g granulated sugar
  • 60 g brown sugar
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 70 g unsalted butter cold, cubed
  • 350 g peach sliced
  • 28 g granulated sugar
  • 75 g whole milk
  • 80 g whole milk yogurt
  • 2 egg
  • 2 tsp vanilla extract
  • 105 g unsalted butter melted
  • 225 g granulated sugar
  • 255 g cake flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 100 g peach diced
  • 130 g blueberries

Instructions

  1. In a medium mixing bowl, combine 150g of all-purpose flour, 35g of granulated sugar, 60g of brown sugar, 1 tsp of cinnamon, and 0.5 tsp of salt using a whisk.
  2. Add 70g of cold unsalted butter, cubed, to the dry ingredients and use your hands to crumble the mixture together. Set aside.
  3. In a skillet, add 350g of sliced peach and 28g of granulated sugar. Cook for about 5 minutes until tender and syrupy. Remove from heat and set aside.
  4. Preheat the oven to 425°F (218°C). Line a baking pan with paper liners or lightly grease it with cooking spray.
  5. In a large mixing bowl, whisk together 75g of milk, 80g of whole milk yogurt, and 2 eggs. Stir in 2 tsp of vanilla extract.
  6. Gradually add 105g of melted unsalted butter and 225g of granulated sugar to the milk and egg mixture, stirring until combined.
  7. Add 255g of cake flour, 2 tsp of baking powder, and 0.5 tsp of salt. Fold in the dry ingredients until just combined.
  8. Gently fold in 100g of diced peach and 130g of fresh blueberries with a spatula.
  9. Pour the batter into the prepared baking dish, spread it out evenly, and top with the cooked sliced peaches. Sprinkle the crumble topping evenly over the cake batter.
  10. Bake at 425°F (218°C) for 13 minutes, then reduce the temperature to 360°F (182°C) and bake for an additional 35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  11. Allow the cake to cool slightly before serving. Enjoy your peach blueberry crumble cake!
