Hot Honey Halloumi Turkish Eggs

Ingredients

  • 2 tbsp neutral flavoured oil
  • 1 tsp chili flakes
  • 1 clove garlic thinly sliced
  • 0 pinch salt
  • 1 cup Greek yogurt 2% or higher
  • 1 clove garlic minced
  • 0 to taste salt
  • 1 pack halloumi cut into ¼ inch slices
  • 1 tbsp avocado oil
  • 4 large egg
  • 0 to taste salt for boiling water
  • 1 tbsp hot honey
  • 0.25 English cucumber thinly sliced
  • 0 to taste parsley chopped, for garnish
  • 0 to taste flakey sea salt for garnish
  • 0 bread toasted, for serving

Instructions

  1. Prepare the chili-garlic oil by heating neutral oil, garlic, and chili flakes in a small pan over medium heat for 2-3 minutes without burning the garlic. Transfer to a small bowl.
  2. Combine Greek yogurt and minced garlic in a medium bowl. Season with salt and mix well. Set aside to reach room temperature.
  3. Pat the halloumi slices dry with a paper towel. Heat avocado oil in a large pan over medium-high heat. Add halloumi and fry for 3-4 minutes per side, until golden brown. Drain on a paper towel.
  4. Bring a medium pot of salted water to a boil. Gently add eggs and cook for 2-3 minutes or until set to your liking. Remove and drain on paper towels.
  5. Arrange a generous swipe of garlicky yogurt on a plate or shallow bowl. Top with poached eggs, fried halloumi, and drizzle hot honey over halloumi and chili oil over everything. Garnish with cucumber slices, parsley, and flakey sea salt.
  6. Serve the dish with your favorite toasted bread or warm pita on the side.
