Raspberry Danish

Ingredients

  • 8 oz cream cheese softened
  • 0.25 cup sugar
  • 1 egg yolk
  • 0.5 tsp vanilla extract
  • 150 g raspberries fresh or frozen
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 0 parchment paper
  • 1 box puff pastry sheets thawed
  • 1 egg

Instructions

  1. In a bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy. Set aside.
  2. In a small pot, combine raspberry jam ingredients. Cook on medium heat until the berries cook into a thick jam-like consistency, around 5 minutes. Set aside.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Unfold the puff pastry sheets on a lightly floured surface. Cut each sheet into squares (about 3x3 inches).
  5. Pipe or dollop the cream cheese filling in the center of each puff pastry square. Swirl the raspberry jam on top.
  6. In a small bowl, beat the egg. Brush the edges of the puff pastry with the beaten egg to give them a golden color when baked.
  7. Bake in the preheated oven for 12-16 minutes, or until the puff pastry is golden and crispy. Allow the Danish to cool slightly on a wire rack before serving.
