Raspberry Danish
Delicious Raspberry Danish made with flaky puff pastry, creamy cheese filling, and a fruity raspberry jam. Perfect for breakfast or a sweet treat.

Ingredients
- 8 oz cream cheese softened
- 0.25 cup sugar
- 1 egg yolk
- 0.5 tsp vanilla extract
- 150 g raspberries fresh or frozen
- 1 tbsp sugar
- 1 tbsp lemon juice
- 0 parchment paper
- 1 box puff pastry sheets thawed
- 1 egg
Instructions
- In a bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy. Set aside.
- In a small pot, combine raspberry jam ingredients. Cook on medium heat until the berries cook into a thick jam-like consistency, around 5 minutes. Set aside.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unfold the puff pastry sheets on a lightly floured surface. Cut each sheet into squares (about 3x3 inches).
- Pipe or dollop the cream cheese filling in the center of each puff pastry square. Swirl the raspberry jam on top.
- In a small bowl, beat the egg. Brush the edges of the puff pastry with the beaten egg to give them a golden color when baked.
- Bake in the preheated oven for 12-16 minutes, or until the puff pastry is golden and crispy. Allow the Danish to cool slightly on a wire rack before serving.
