Chili, Garlic & Herb Chicken Skewers

The simplest, most flavorful chicken skewers made with easy pantry staples. Cook them up in the oven for a quick and delicious meal that's perfect for weekdays or meal prep, served with rice and veggies or a salad.

Chili, Garlic & Herb Chicken Skewers

Cook time: 20 minutes

Servings: 4

Ingredients

  • 0 cups water for soaking skewers
  • 2.25 lbs chicken breast or thighs cut into 2-inch pieces
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp dried oregano
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 0 cooking spray for spraying skewers
  • 0.25 cup olive oil
  • 10 cloves garlic minced
  • 0.25 cup fresh parsley minced

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes before cooking.
  2. Preheat your oven to 425°F.
  3. Cut the chicken breast or thighs into 2-inch pieces and add them to a large bowl. Season with the chili powder, paprika, onion powder, garlic powder, oregano, salt, and black pepper. Toss well until evenly coated.
  4. Thread the seasoned chicken pieces onto skewers, making 4 skewers in total. Spray generously with cooking spray and place them on a baking sheet.
  5. Bake the skewers in the preheated oven for 20 minutes. Remove from the oven and set aside.
  6. To make the garlic and herb oil, add olive oil to a small skillet over medium heat. Add minced garlic and parsley to the hot oil and cook for two minutes.
  7. Remove the skillet from heat and brush the garlic & herb oil evenly over the chicken skewers before serving.
