Chili, Garlic & Herb Chicken Skewers
The simplest, most flavorful chicken skewers made with easy pantry staples. Cook them up in the oven for a quick and delicious meal that's perfect for weekdays or meal prep, served with rice and veggies or a salad.

Ingredients
- 0 cups water for soaking skewers
- 2.25 lbs chicken breast or thighs cut into 2-inch pieces
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp dried oregano
- 1.5 tsp salt
- 0.5 tsp black pepper
- 0 cooking spray for spraying skewers
- 0.25 cup olive oil
- 10 cloves garlic minced
- 0.25 cup fresh parsley minced
Instructions
- If using wooden skewers, soak them in water for 30 minutes before cooking.
- Preheat your oven to 425°F.
- Cut the chicken breast or thighs into 2-inch pieces and add them to a large bowl. Season with the chili powder, paprika, onion powder, garlic powder, oregano, salt, and black pepper. Toss well until evenly coated.
- Thread the seasoned chicken pieces onto skewers, making 4 skewers in total. Spray generously with cooking spray and place them on a baking sheet.
- Bake the skewers in the preheated oven for 20 minutes. Remove from the oven and set aside.
- To make the garlic and herb oil, add olive oil to a small skillet over medium heat. Add minced garlic and parsley to the hot oil and cook for two minutes.
- Remove the skillet from heat and brush the garlic & herb oil evenly over the chicken skewers before serving.
