Lemon Raspberry Bars

Ingredients
- 1.5 teaspoons corn starch
- 2 tablespoons lemon juice
- 1.5 teaspoons sugar
- 0.67 cups raspberries
- 0.75 teaspoons lemon zest
- 0.5 cups sugar
- 0.67 cups butter
- 1.33 cups flour
- 0.125 teaspoons salt
- 0 dough pressed into pan
- 1.5 tablespoons lemon zest
- 2 cups sugar
- 5 whole eggs
- 0.67 cups lemon juice
- 0.67 cups flour
Instructions
- Combine 1 1/2 teaspoons of corn starch, 2 tablespoons of lemon juice, and 1 1/2 teaspoons of sugar into a pot. Mix until the corn starch is dissolved.
- Add 2/3 cup of raspberries to the pot. Cook over medium heat until raspberries are broken down and the mixture thickens. Let cool.
- Add 3/4 teaspoon of lemon zest to 1/2 cup of sugar and massage to release oils from the lemon peel. Add 2/3 cup of butter, 1 1/3 cup of flour, and 1/8 teaspoon of salt. Mix until crumbly but able to stick together.
- Press the dough mixture into a 9x9 inch pan. Bake at 350°F for about 15 minutes or until lightly browned.
- For the filling, add 1 1/2 tablespoons of lemon zest to 2 cups of sugar and massage well. Whisk 5 eggs in a separate bowl, then add to the sugar mixture.
- Mix in 2/3 cup of lemon juice and 2/3 cup of flour. Pour the lemon mixture onto the semi-cooled crust.
- Bake at 350°F for 25-35 minutes until the filling is set. Cool in the refrigerator for at least 2 hours before slicing and serving.
