Watermelon Feta Salad

Ingredients

  • 0.5 cup Ice water
  • 1 tablespoon Shallot very finely diced
  • 0.25 cup Lemon juice
  • 2 tablespoon Extra-virgin olive oil
  • 2 tablespoon Fresh basil finely chopped
  • 2 teaspoon Lemon zest lightly packed
  • 0 teaspoon Flaky sea salt
  • 0 teaspoon Black pepper
  • 8 cup Seedless watermelon cubed (1-inch pieces)
  • 1.5 cup English cucumber seeded, cubed (1/2-inch pieces)
  • 1.5 cup Feta cheese crumbled
  • 0.5 cup Fresh mint coarsely chopped
  • 3 tablespoon Fresh jalapeño very finely diced, seeded and deveined
  • 0.25 cup Fresh mint sprigs for serving

Instructions

  1. Fill a 1-cup glass bowl halfway with ice water and add the diced shallot. Soak for 10 minutes, then drain and pat the shallot dry.
  2. In an extra-large salad bowl, combine the drained shallot, lemon juice, olive oil, chopped basil, lemon zest, salt, and pepper. Whisk until well combined.
  3. Add the cubed watermelon, cucumber, crumbled feta cheese, chopped mint, and finely diced fresh jalapeño to the bowl with the dressing. Toss until all the ingredients are evenly combined and coated with dressing.
  4. Top with fresh mint sprigs, if using, and serve chilled.
