Green Bean Stir-Fry with Tender Beef

Ingredients
- 1.5 lb beef thinly sliced, typically sirloin
- 0.25 tsp ground cumin
- 0 black pepper freshly ground, to taste
- 0 Maldon salt to taste
- 1 tbsp soy sauce
- 0.25 tsp baking soda
- 2 cups green beans French-cut, thin diagonal slices
- 0 water boiling for blanching
- 0 ice for ice bath
- 0 neutral oil such as avocado oil
- 4 cloves garlic finely chopped
- 0 water for deglazing
- 1 yellow onion chopped
- 0 green beans previously blanched
- 0 beef previously cooked
- 0.5 cup Peruvian corn kernels boiled
- 0.25 cup Lomo Saltado sauce
- 2 tomatoes seeded and roughly chopped
Instructions
- In a bowl, combine the sliced beef with 1/4 tsp ground cumin, freshly ground black pepper, Maldon salt, 1 tbsp soy sauce, and 1/4 tsp baking soda. Let it marinate for at least 30 minutes.
- Blanch the green beans in boiling water for 2 minutes, then transfer immediately to a bowl of ice water. Set aside.
- Heat a skillet over medium-high heat with neutral oil. Cook the beef in small batches for about 1 minute per side until just browned. Remove and set aside.
- Reduce heat to medium-low and add garlic to the skillet. Add a splash of water to deglaze the pan and cook gently for 5 minutes until aromatic.
- Toss in the chopped onion and cook for 2 minutes. Add the blanched green beans and stir-fry for another 2–3 minutes.
- Return the cooked beef to the skillet, along with 1/2 cup of boiled Peruvian corn kernels, and pour in 1/4 cup of Lomo Saltado sauce. Toss everything gently to coat.
- Add the tomatoes last so they stay fresh and juicy. Toss once more and serve hot.
