Creamy Cajun Alfredo with Fried Oyster Mushrooms

Ingredients

  • 1 cup Plant Milk
  • 1 tbsp Apple Cider Vinegar
  • 2 Oyster Mushroom Clusters Adjust quantity based on desired serving
  • 0.5 cup Plain Flour
  • 0.5 cup Panko Breadcrumbs
  • 1 tsp Old Bay Seasoning
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 0.5 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tbsp Nutritional Yeast
  • 2 cups Vegetable Oil For frying
  • 2 tbsp Butter Use vegan butter if preferred
  • 2 Shallots Diced
  • 1 tbsp Fresh Basil Roughly chopped
  • 1 tbsp Fresh Oregano Roughly chopped
  • 4 Garlic Minced
  • 1 tsp Cajun Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste
  • 0.5 cup Vegetable Stock
  • 1 cup Vegan Cream
  • 1 cup Oat Milk
  • 2 tbsp Vegan Parmesan
  • 2 tbsp Nutritional Yeast
  • 12 oz Prepared Pasta Pasta of your choice

Instructions

  1. Prepare the buttermilk by mixing the plant milk with apple cider vinegar. Add the oyster mushroom clusters and let them sit for at least 10 minutes.
  2. In a separate bowl, combine flour, panko breadcrumbs, Old Bay seasoning, smoked paprika, garlic powder, onion powder, salt, black pepper, and nutritional yeast. Mix well.
  3. Heat oil in a pan over medium-high heat. Coat each mushroom cluster in the flour mixture before frying for 5-6 minutes on each side until golden brown.
  4. In a separate pan, melt butter over low to medium heat. Add diced shallots and chopped herbs, cooking until the shallots are translucent.
  5. Add minced garlic to the pan with shallots, followed by Cajun seasoning, onion powder, garlic powder, paprika, salt, and pepper. Stir well.
  6. Pour vegetable stock into the pan and allow it to reduce slightly.
  7. Add vegan cream and oat milk to the pan, allowing the mixture to reduce. Then, add vegan Parmesan and nutritional yeast. Stir well and season with salt and pepper to taste.
  8. Add cooked pasta to the sauce, mixing until the pasta is evenly coated.
  9. Plate the creamy Cajun Alfredo pasta and top with the crispy fried oyster mushrooms. Serve hot and enjoy!
