Maple, Ginger & Thyme Sweet Potatoes & Squash with Italian Sausage

Maple, Ginger & Thyme Sweet Potatoes & Squash with Italian Sausage

Ingredients

  • 0.5 cup olive oil
  • 0.5 cup maple syrup
  • 2 tbsp fresh ginger grated
  • 2 tbsp fresh thyme
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1.5 lbs raw Italian sausage chicken or pork
  • 2 lbs sweet potatoes cut into 2 inch pieces
  • 0 sauce
  • 1 red onion quartered
  • 1.5 lbs squash cut into ½ inch rounds
  • 0 sauce
  • 1.5 lbs cooked Italian sausage
  • 0 sauce

Instructions

  1. Preheat oven to 425°F. In a small bowl, combine ½ cup olive oil, ½ cup maple syrup, 2 tablespoons grated fresh ginger, 2 tablespoons fresh thyme, and 1 teaspoon salt. Whisk the ingredients well to make the sauce.
  2. Add 1 tablespoon of olive oil to a large skillet over medium heat. Remove the sausage from its casing and break it into bite-sized pieces. Brown the sausage on all sides, then remove from the pan and set aside.
  3. Place sweet potatoes on a baking sheet or large baking dish. Pour the prepared sauce over the top and toss until fully coated. Roast for 20 minutes.
  4. After 20 minutes, remove the potatoes from the oven. Add the quartered red onion and squash rounds to the baking dish. Toss the veggies in the remaining sauce, flip the potatoes, and return to the oven for another 20 minutes.
  5. After the second 20 minutes, remove the baking dish from the oven again. Add the cooked sausage to the dish and toss all the ingredients together in the sauce. Flip the veggies to ensure even cooking and return to the oven for the final 20 minutes.
