Greek Orange Syrup Cake

Ingredients

  • 0 from 2 oranges orange juice
  • 7.1 oz sugar
  • 6.8 fl oz vegetable oil
  • 2 large eggs
  • 0 from 2 oranges orange zest
  • 5.3 oz Greek yogurt
  • 10.6 oz shredded filo pastry shredded into small bits
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 16 oz sugar
  • 8 fl oz water
  • 1 cinnamon stick

Instructions

  1. Juice the oranges and set aside. Preheat the oven to 170 degrees Celsius fan.
  2. In a bowl, whisk together the sugar, vegetable oil, and eggs until combined.
  3. Pour the orange juice, add the orange zest and Greek yoghurt, and whisk to combine once again.
  4. Add the shredded filo pastry to the wet ingredients, along with the baking powder and vanilla essence. Stir to combine.
  5. Pour the mixture into a pre-greased baking dish and bake for 45 minutes until the cake turns golden brown on top.
  6. In a saucepan, add the sugar, water and cinnamon stick and bring to a boil.
  7. Once the cake is cooked and the syrup has cooled fully, carefully pour over the syrup. I like to do this in batches using a ladle.
