Greek Orange Syrup Cake

Ingredients
- 0 from 2 oranges orange juice
- 7.1 oz sugar
- 6.8 fl oz vegetable oil
- 2 large eggs
- 0 from 2 oranges orange zest
- 5.3 oz Greek yogurt
- 10.6 oz shredded filo pastry shredded into small bits
- 1 tsp baking powder
- 1 tsp vanilla extract
- 16 oz sugar
- 8 fl oz water
- 1 cinnamon stick
Instructions
- Juice the oranges and set aside. Preheat the oven to 170 degrees Celsius fan.
- In a bowl, whisk together the sugar, vegetable oil, and eggs until combined.
- Pour the orange juice, add the orange zest and Greek yoghurt, and whisk to combine once again.
- Add the shredded filo pastry to the wet ingredients, along with the baking powder and vanilla essence. Stir to combine.
- Pour the mixture into a pre-greased baking dish and bake for 45 minutes until the cake turns golden brown on top.
- In a saucepan, add the sugar, water and cinnamon stick and bring to a boil.
- Once the cake is cooked and the syrup has cooled fully, carefully pour over the syrup. I like to do this in batches using a ladle.
