Hot Honey, Feta & Scrambled Egg Loaded Hash Browns

Cook time: 20 minutes

Servings: 1

Ingredients

  • 0 hash browns store-bought or homemade
  • 0.5 tablespoon butter or olive oil
  • 2 egg
  • 0.25 teaspoon salt
  • 0.7 ounce feta cheese
  • 1 tablespoon hot honey to taste
  • 0.5 tablespoon chives chopped
  • 0.5 teaspoon sesame seeds
  • 0.5 tablespoon crispy onions store-bought or homemade

Instructions

  1. Cook as many hash browns as you like in the oven or air fryer at 180°C fan (356°F) or 200°C (392°F) for 15-17 minutes or until golden and crispy.
  2. Meanwhile, heat a non-stick frying pan over low heat and add a little butter or olive oil.
  3. Crack 2 eggs straight into the pan. Add a pinch of salt and cook slowly, using a spatula or wooden spoon to gently push the eggs from the edges into the center. Remove from the heat just before fully cooked.
  4. Plate the cooked hash browns and top with scrambled eggs. Crumble over 20g of feta cheese.
  5. Drizzle with hot honey and garnish with chopped chives, a pinch of sesame seeds, and crispy onions.
