Garlic-Paprika Shrimp Skillet

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 whole shallots chopped
  • 1 whole red bell pepper diced
  • 4 cloves garlic cloves minced
  • 1 tablespoon tomato paste
  • 0.5 teaspoon crushed red pepper flakes or Calabrian chiles
  • 1 cup vegetable broth
  • 1 teaspoon paprika
  • 1 pound shrimp peeled and deveined
  • 2 cups fresh baby spinach
  • 0.5 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 0.25 cup fresh parsley leaves chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the shallots and red bell pepper. Sauté until the shallots are translucent.
  3. Stir in the garlic, tomato paste, and crushed red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in the vegetable broth and add paprika.
  5. Add the shrimp, ensuring they are in a single layer. Cook until pink and opaque.
  6. Stir in the fresh baby spinach and allow to wilt.
  7. Reduce the heat to low and stir in the heavy cream. Cook until the sauce is slightly thickened.
  8. Finish with fresh lemon juice and parsley. Serve hot over rice, couscous, or orzo.
