Garlic-Paprika Shrimp Skillet

Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 whole shallots chopped
- 1 whole red bell pepper diced
- 4 cloves garlic cloves minced
- 1 tablespoon tomato paste
- 0.5 teaspoon crushed red pepper flakes or Calabrian chiles
- 1 cup vegetable broth
- 1 teaspoon paprika
- 1 pound shrimp peeled and deveined
- 2 cups fresh baby spinach
- 0.5 cup heavy cream
- 1 tablespoon fresh lemon juice
- 0.25 cup fresh parsley leaves chopped
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the shallots and red bell pepper. Sauté until the shallots are translucent.
- Stir in the garlic, tomato paste, and crushed red pepper flakes. Cook for 1 minute until fragrant.
- Pour in the vegetable broth and add paprika.
- Add the shrimp, ensuring they are in a single layer. Cook until pink and opaque.
- Stir in the fresh baby spinach and allow to wilt.
- Reduce the heat to low and stir in the heavy cream. Cook until the sauce is slightly thickened.
- Finish with fresh lemon juice and parsley. Serve hot over rice, couscous, or orzo.
