Chipotle Honey Chicken Tacos
Delightful tacos combining chipotle-marinated chicken with a sweet honey glaze, topped with fresh guacamole and creamy queso. Perfect for any taco night!

Ingredients
- 3 pieces chipotle peppers in adobo sauce
- 0.25 cup avocado oil
- 4 cloves garlic finely minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- 8 pieces chicken thighs
- 4 pieces ripe avocados
- 1 bunch cilantro
- 1 piece jalapenos diced
- 0.25 cup red onion diced
- 1 lime lime juice
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 2 pieces chipotle peppers in adobo
- 0.5 cup raw honey
- 1 tsp smoked paprika
- 1 lime lime juice
- 1 cup queso or as needed
- 12 pieces tortillas
Instructions
- Blend the marinade ingredients together in a blender until smooth.
- Place chicken thighs in a bowl or ziplock bag and pour the marinade over top. Let it marinate for a minimum of 2 hours or overnight.
- Prepare the fresh guacamole by mashing all ingredients together in a bowl until blended.
- Preheat the griddle to high heat. Add the marinated chicken thighs and cook for about 4 minutes on each side. Remove the chicken once it reaches an internal temperature of 165°F.
- Blend the ingredients for the Chipotle Honey Sauce until smooth.
- Cut the cooked chicken into bite-sized pieces and pour the Chipotle Honey Sauce over the top. Mix well to coat all the chicken pieces.
- Warm up some queso in a saucepan until liquid consistency. Remove from heat.
- Assemble the tacos with a layer of guacamole on the bottom, followed by the Chipotle Honey chicken, and top with queso. Serve immediately and enjoy.
