Chipotle Honey Chicken Tacos

Ingredients

  • 3 pieces chipotle peppers in adobo sauce
  • 0.25 cup avocado oil
  • 4 cloves garlic finely minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 8 pieces chicken thighs
  • 4 pieces ripe avocados
  • 1 bunch cilantro
  • 1 piece jalapenos diced
  • 0.25 cup red onion diced
  • 1 lime lime juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 pieces chipotle peppers in adobo
  • 0.5 cup raw honey
  • 1 tsp smoked paprika
  • 1 lime lime juice
  • 1 cup queso or as needed
  • 12 pieces tortillas

Instructions

  1. Blend the marinade ingredients together in a blender until smooth.
  2. Place chicken thighs in a bowl or ziplock bag and pour the marinade over top. Let it marinate for a minimum of 2 hours or overnight.
  3. Prepare the fresh guacamole by mashing all ingredients together in a bowl until blended.
  4. Preheat the griddle to high heat. Add the marinated chicken thighs and cook for about 4 minutes on each side. Remove the chicken once it reaches an internal temperature of 165°F.
  5. Blend the ingredients for the Chipotle Honey Sauce until smooth.
  6. Cut the cooked chicken into bite-sized pieces and pour the Chipotle Honey Sauce over the top. Mix well to coat all the chicken pieces.
  7. Warm up some queso in a saucepan until liquid consistency. Remove from heat.
  8. Assemble the tacos with a layer of guacamole on the bottom, followed by the Chipotle Honey chicken, and top with queso. Serve immediately and enjoy.
