Spinach Artichoke Pasta Primavera

Ingredients

  • 2 cups cherry tomatoes
  • 4 cloves garlic diced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp red pepper flakes
  • 1 spinach artichoke dip frozen
  • 2 tbsp olive oil
  • 2 cups chickpea pasta cooked
  • 0 optional parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place 2 cups of cherry tomatoes in a 9x9 baking dish.
  3. Sprinkle 4 cloves of diced garlic, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp red pepper flakes over the tomatoes.
  4. Add the frozen spinach artichoke dip to the center of the dish, ensuring tomatoes surround all four sides. Drizzle 2-3 tbsp of olive oil over the dip.
  5. Bake for 30-40 minutes, or until the dip is bubbly.
  6. Stir the dip and tomatoes together, then add 2-3 cups of cooked chickpea pasta. Stir to combine and sprinkle with parmesan cheese if desired.
