Rosemary Garlic Focaccia Muffins

Soft on the inside, golden and crispy on the outside, these shareable focaccia muffins topped with a buttery rosemary and garlic topping are the perfect side dish for Thanksgiving dinner.

Rosemary Garlic Focaccia Muffins

Ingredients

  • 1 packet active dry yeast
  • 1 tablespoon honey
  • 3.5 cups bread flour
  • 1.5 cups water warm
  • 0 dough prepared focaccia dough
  • 2 sprigs rosemary
  • 3 cloves garlic
  • 0.25 cup extra-virgin olive oil
  • 0 olive oil with rosemary and garlic prepared in previous step

Instructions

  1. Prepare the dough for the focaccia by mixing active dry yeast, honey, bread flour, and water until combined. Let it proof for approximately 10 minutes until frothy.
  2. Divide the dough into 12 equal strips. Place the strips in a muffin pan and allow them to sit for about 2 hours until fully expanded.
  3. Dimple the dough to create large air bubbles. Mince rosemary sprigs and garlic cloves.
  4. Heat extra-virgin olive oil in a small pan and cook the minced rosemary and garlic for 30 seconds.
  5. Drizzle the infused olive oil over the risen dough in the muffin pan. Bake at 375°F (190°C) for 20 minutes until golden brown.
