Broccoli Mashed Potatoes
A delightful combination of creamy potatoes and fresh broccoli, brought together with sautéed garlic, butter, milk, and parmesan. Perfect for a comforting, nutritious side dish.

Ingredients
- 1.5 lbs Yukon Gold Potatoes peeled and sliced in quarters
- 0 Kosher Salt for boiling
- 0 Water to cover potatoes
- 1 Tbsp Butter divided
- 3 cloves Garlic minced
- 3 cups Broccoli finely chopped
- 0 Kosher Salt a sprinkle
- 0 Black Pepper a sprinkle
- 0.5 cup Milk
- 2 Tbsp Butter divided
- 0.25 cup Parmesan
- 0 Kosher Salt to taste
- 0 Black Pepper to taste
- 1 Tbsp Chives sliced
Instructions
- Place the potatoes in a medium pot of salted water, bring to a boil over high heat, then turn down to medium and simmer for 15-20 minutes until a fork inserts easily; drain potatoes using a colander.
- Return the empty pot to the stove and melt 1 tablespoon of butter over medium heat; add the garlic and sauté for 1 minute until fragrant, then add the broccoli with a sprinkle of salt and pepper; sauté until broccoli is tender (3-4 minutes) then stir in the milk and turn off the heat.
- Mash the potatoes (or rice them with a potato ricer) and add to the pot along with 2 tablespoons of more butter and the parmesan; mix and season with salt and pepper to taste.
- Serve the potatoes with fresh chives sprinkled on top and enjoy!
