Firecracker Beef and Veggies

This sweet and spicy beef with five-ingredient firecracker sauce is a recipe worth craving. Serve it with brown rice noodles for a saucy noodle bowl or over rice for a quick and satisfying meal.

Firecracker Beef and Veggies

Ingredients

  • 8 cups water salted
  • 8 oz rice noodles optional - I used @lotusfoods - or serve over rice
  • 0.5 cup sriracha
  • 3 tbsp coconut sugar
  • 3 tbsp honey
  • 0.25 cup tamari
  • 0.25 cup unseasoned rice vinegar
  • 2 tbsp avocado oil
  • 1 pound ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 0.5 tsp crushed red pepper flakes
  • 1 small crown broccoli cut into florets
  • 1 bell pepper thinly sliced
  • 0.33 cup water
  • 0.5 cup green onions sliced
  • 2 tbsp sesame seeds

Instructions

  1. Set a large stock pot of salted water to boil to make your noodles.
  2. Whisk the sauce ingredients together in a small bowl and set aside.
  3. Heat the avocado oil in a large stainless steel skillet over medium heat.
  4. Add the ground beef and cook, breaking up as you go, until browned.
  5. Using a paper towel, remove most of the accumulated grease.
  6. Add onions and cook for 2-3 minutes then add the garlic and chili flakes, cooking for another minute.
  7. Pour the sauce over ground beef in skillet and cook for 6-8 minutes until the sauce is beginning to caramelize.
  8. Add the broccoli and bell pepper and cook for another 2-3 minutes.
  9. Add the water, stirring to incorporate, and let simmer for another 2 minutes to develop all that saucy goodness!
  10. Add your cooked noodles to the firecracker beef and veggies, stirring for 1 minute to ensure the noodles are evenly coated in the sauce.
  11. Serve with sliced green onions and sesame seeds.
