Carrot Cake Cookies
Delight in the flavors of carrot cake in cookie form, complete with a creamy cinnamon frosting and optional walnut decoration.

Ingredients
- 0.5 cup Unsalted butter at room temp
- 0.33 cup Granulated sugar
- 0.33 cup Brown sugar
- 1 Egg
- 1 tsp Vanilla extract
- 1.5 cup All purpose flour
- 0.5 tsp Baking soda
- 0.5 tsp Baking powder
- 1 tsp Ground cinnamon
- 0.125 tsp Nutmeg
- 0.125 tsp Ground cloves
- 1 cup Grated carrots
- 0 Parchment paper
- 4 oz Cream cheese
- 2 Tbsp Unsalted butter
- 1 tsp Vanilla extract
- 0.25 tsp Ground cinnamon
- 1.5 cups Powdered sugar
- 0.5 cup Chopped walnuts for decorating, optional
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, cream together the butter and both sugars until light and creamy.
- Add in the egg and vanilla extract and mix until combined.
- Mix in the flour, baking soda, baking powder, cinnamon, nutmeg, and cloves. Fold in the grated carrots.
- Scoop dough into preferred cookie size and place on a baking sheet lined with parchment paper. Make sure the cookies are at least 1 inch apart because they will spread. Place in the oven for 15min or until edges start to brown a bit.
- Let cookies cool on a cooling rack.
- For the frosting: in a bowl using either a stand mixer or hand mixer, cream the cream cheese and butter together until smooth. Add in the vanilla extract, cinnamon and powdered sugar and mix until smooth and fluffy.
- Frost the cookies once they have cooled completely and decorate edges with some chopped walnuts (optional).
