Carrot Cake Cookies

Carrot Cake Cookies

Ingredients

  • 0.5 cup Unsalted butter at room temp
  • 0.33 cup Granulated sugar
  • 0.33 cup Brown sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1.5 cup All purpose flour
  • 0.5 tsp Baking soda
  • 0.5 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.125 tsp Nutmeg
  • 0.125 tsp Ground cloves
  • 1 cup Grated carrots
  • 0 Parchment paper
  • 4 oz Cream cheese
  • 2 Tbsp Unsalted butter
  • 1 tsp Vanilla extract
  • 0.25 tsp Ground cinnamon
  • 1.5 cups Powdered sugar
  • 0.5 cup Chopped walnuts for decorating, optional

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large bowl, cream together the butter and both sugars until light and creamy.
  3. Add in the egg and vanilla extract and mix until combined.
  4. Mix in the flour, baking soda, baking powder, cinnamon, nutmeg, and cloves. Fold in the grated carrots.
  5. Scoop dough into preferred cookie size and place on a baking sheet lined with parchment paper. Make sure the cookies are at least 1 inch apart because they will spread. Place in the oven for 15min or until edges start to brown a bit.
  6. Let cookies cool on a cooling rack.
  7. For the frosting: in a bowl using either a stand mixer or hand mixer, cream the cream cheese and butter together until smooth. Add in the vanilla extract, cinnamon and powdered sugar and mix until smooth and fluffy.
  8. Frost the cookies once they have cooled completely and decorate edges with some chopped walnuts (optional).
