Tuscan Chicken Pasta
A rich, creamy pasta dish packed with garlic, sun-dried tomatoes, and Parmesan. Perfect for a comforting meal.

Ingredients
- 8 oz pasta thin spaghetti, penne, fettuccine, or pici
- 0 tsp salt
- 2 pcs boneless, skinless chicken breasts or thighs, sliced
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp smoked paprika
- 0.5 tsp garlic powder
- 3 tbsp olive oil
- 3 tbsp butter
- 3 cloves garlic minced
- 1 small onion finely chopped
- 0.5 cup sun-dried tomatoes chopped
- 2 tbsp tomato paste
- 0.5 cup chicken broth
- 1 cup heavy cream
- 0.5 cup Parmesan cheese grated
- 1 tsp Italian seasoning
- 0.5 tsp red pepper flakes optional, for heat
- 1 handful fresh spinach
- 0.5 cup pasta water if needed
- 0 fresh basil for garnish
- 0 Parmesan cheese extra for garnish
Instructions
- Boil pasta in salted water until al dente. Reserve ½ cup of pasta water before draining.
- Season chicken with salt, pepper, smoked paprika, and garlic powder.
- Heat olive oil in a pan over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same pan, melt butter and sauté garlic, onions, and sun-dried tomatoes for 1-2 minutes.
- Pour in chicken broth, scraping up any browned bits. Add heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Stir in spinach and let it wilt.
- Add the cooked pasta to the sauce. Toss to coat, adding a splash of pasta water if needed for consistency.
- Plate the pasta and add the cooked chicken on top. Sprinkle some more Parmesan cheese, serve immediately!
