Spicy Spinach Mushroom Pasta
A creamy, saucy pasta bursting with the flavors of spicy mushrooms, savory garlic, and fresh spinach. Perfect with a sprinkle of chili flakes and a sip of wine.

Ingredients
- 10 oz pasta
- 16 oz chopped mushrooms white and oyster mushrooms
- 2 tbsp butter
- 3 clove garlic minced
- 0.5 jalapeno chopped
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika or cayenne
- 0.5 teaspoon turmeric
- 1 tbsp olive oil
- 0.5 onion diced
- 4 clove garlic minced
- 2 handful spinach
- 2 tbsp butter
- 1 tbsp all-purpose flour
- 8 oz milk whole milk
- 8 oz broth
- 0.25 cup Parmesan cheese
- 16 oz heavy whipping cream
- 2 cups mozzarella cheese
- 0 tbsp chili oil
- 0 tsp chili flakes
Instructions
- Cook the pasta in salted water until al dente.
- Heat butter in a pan and cook the chopped mushrooms until they begin to brown.
- Add minced garlic, chopped jalapeño, salt, black pepper, paprika, and turmeric to the mushrooms. Stir and remove from heat.
- In another pan, sauté diced onion, minced garlic, and spinach in olive oil until spinach wilts.
- In a pan over low-medium heat, melt butter, add flour, and whisk until golden brown. Slowly whisk in milk and broth.
- Stir in Parmesan cheese, then add cooked spinach and heavy whipping cream. Continue to cook until the sauce thickens.
- Combine pasta with the sauce, top with the spicy mushrooms, and sprinkle with mozzarella cheese. Cover to melt.
- Optionally drizzle with chili oil and sprinkle with chili flakes before serving.
