Spicy Spinach Mushroom Pasta

Spicy Spinach Mushroom Pasta

Ingredients

  • 10 oz pasta
  • 16 oz chopped mushrooms white and oyster mushrooms
  • 2 tbsp butter
  • 3 clove garlic minced
  • 0.5 jalapeno chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika or cayenne
  • 0.5 teaspoon turmeric
  • 1 tbsp olive oil
  • 0.5 onion diced
  • 4 clove garlic minced
  • 2 handful spinach
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 8 oz milk whole milk
  • 8 oz broth
  • 0.25 cup Parmesan cheese
  • 16 oz heavy whipping cream
  • 2 cups mozzarella cheese
  • 0 tbsp chili oil
  • 0 tsp chili flakes

Instructions

  1. Cook the pasta in salted water until al dente.
  2. Heat butter in a pan and cook the chopped mushrooms until they begin to brown.
  3. Add minced garlic, chopped jalapeño, salt, black pepper, paprika, and turmeric to the mushrooms. Stir and remove from heat.
  4. In another pan, sauté diced onion, minced garlic, and spinach in olive oil until spinach wilts.
  5. In a pan over low-medium heat, melt butter, add flour, and whisk until golden brown. Slowly whisk in milk and broth.
  6. Stir in Parmesan cheese, then add cooked spinach and heavy whipping cream. Continue to cook until the sauce thickens.
  7. Combine pasta with the sauce, top with the spicy mushrooms, and sprinkle with mozzarella cheese. Cover to melt.
  8. Optionally drizzle with chili oil and sprinkle with chili flakes before serving.
