One Pan Sausage and Gnocchi Pasta
A quick and flavorful one-pan meal with Italian sausage, gnocchi, tomatoes, and spinach, topped with parmesan.

Ingredients
- 2 tbsp olive oil for sautéing
- 3 cloves garlic minced
- 0.5 large onion chopped
- 1 lb ground Italian sausage mild
- 0 salt to taste
- 0 black pepper to taste
- 0 oregano dried, to taste
- 1.5 tbsp tomato paste
- 0.5 cup chicken broth
- 2 packages gnocchi cooked al dente
- 1 can diced tomatoes or fresh sliced
- 0.5 cup ricotta cheese
- 1 bag spinach baby
- 0 parmesan cheese to taste, plus extra for serving
Instructions
- Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
- Add ground Italian sausage to the pan. Cook until the sausage is browned. Season with salt, pepper, and oregano.
- Add tomato paste to the pan and mix it into the sausage. Pour in chicken broth and stir until combined.
- Add precooked al dente gnocchi, diced tomatoes, and ricotta cheese to the pan. Combine well.
- Reduce the heat and add spinach to the pan. Stir until wilted.
- Stir in parmesan cheese. Serve with extra parmesan on the side.
