One Pan Sausage and Gnocchi Pasta

A quick and flavorful one-pan meal with Italian sausage, gnocchi, tomatoes, and spinach, topped with parmesan.

One Pan Sausage and Gnocchi Pasta

Ingredients

  • 2 tbsp olive oil for sautéing
  • 3 cloves garlic minced
  • 0.5 large onion chopped
  • 1 lb ground Italian sausage mild
  • 0 salt to taste
  • 0 black pepper to taste
  • 0 oregano dried, to taste
  • 1.5 tbsp tomato paste
  • 0.5 cup chicken broth
  • 2 packages gnocchi cooked al dente
  • 1 can diced tomatoes or fresh sliced
  • 0.5 cup ricotta cheese
  • 1 bag spinach baby
  • 0 parmesan cheese to taste, plus extra for serving

Instructions

  1. Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add ground Italian sausage to the pan. Cook until the sausage is browned. Season with salt, pepper, and oregano.
  3. Add tomato paste to the pan and mix it into the sausage. Pour in chicken broth and stir until combined.
  4. Add precooked al dente gnocchi, diced tomatoes, and ricotta cheese to the pan. Combine well.
  5. Reduce the heat and add spinach to the pan. Stir until wilted.
  6. Stir in parmesan cheese. Serve with extra parmesan on the side.
