Brownie Basque Cheesecake

Brownie Basque Cheesecake

Ingredients

  • 1 sheet parchment paper
  • 66 g caster sugar
  • 33 g brown sugar
  • 1 egg
  • 38 g butter
  • 66 g dark chocolate
  • 20 g flour
  • 8 g cocoa powder
  • 300 g cream cheese
  • 100 g caster sugar
  • 150 g heavy cream
  • 10 g flour
  • 0.5 piece vanilla bean seeds scraped
  • 2 egg

Instructions

  1. Preheat your oven to 200°C (392°F). Line an 8x4 inch loaf pan with parchment paper.
  2. Whisk together 66g caster sugar, 33g brown sugar, and 1 egg until light and pale.
  3. Melt together 38g butter and 66g dark chocolate. Pour the melted mixture into the egg and sugar mixture.
  4. Fold in 20g flour and 8g cocoa powder to bring the brownie batter together.
  5. Transfer the brownie batter into the base of the prepared loaf pan.
  6. For the cheesecake layer, whisk 300g cream cheese, 100g caster sugar, 150g heavy cream, 10g flour, seeds from 1/2 vanilla bean, and 2 eggs until smooth.
  7. Pour the cheesecake batter over the brownie layer. Bake at 200°C for 20 minutes, or until the top is brown and the center is slightly jiggly.
