Korean BBQ Meatballs

Ingredients

  • 1 pound ground beef
  • 0.5 cup panko
  • 1 egg
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 2 tablespoons gochujang
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 2 green onions chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon gochujang
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 1 teaspoon gochujang
  • 0.5 teaspoon sesame oil
  • 1 tablespoon lime juice freshly squeezed
  • 0.5 cup mayonnaise

Instructions

  1. In a large mixing bowl, combine ground beef, panko, egg, minced garlic, grated ginger, gochujang, soy sauce, sesame oil, brown sugar, and chopped green onions.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. In a large skillet, fry the meatballs over medium heat until they are golden and caramelized on all sides. Remove them from the pan.
  4. In the same pan, prepare the glaze by combining soy sauce, honey, brown sugar, gochujang, rice vinegar, sesame oil, and a cornstarch slurry. Cook until the mixture thickens.
  5. Add the meatballs back into the pan, coating them well with the glaze.
  6. Prepare the spicy sesame mayo by mixing gochujang, sesame oil, lime juice, and mayonnaise until smooth.
