Salmon & Quinoa Power Salad with Lemon-Feta-Avocado Salsa

Ingredients
- 1 lb salmon skin removed, cut into cubes
- 0.5 tsp salt
- 1 tsp dried dill
- 0.5 tsp dried oregano
- 0.25 tsp black pepper
- 0.5 tbsp olive oil
- 3 cups cooked quinoa
- 1 cup kale finely chopped
- 0.33 cup red onion finely chopped
- 1 tbsp olive oil
- 0.5 lemon lemon juice
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 avocado ripe, chopped
- 2 tbsp fresh parsley chopped
- 0.5 tbsp capers chopped
- 0.33 cup feta cheese crumbled
- 1 tsp lemon zest
- 0.5 lemon lemon juice
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup Greek yogurt for serving
- 0 fresh dill for garnish
- 0 tahini optional
- 0 pistachios optional
Instructions
- Cut the salmon into bite-sized cubes and transfer to a bowl.
- Season the salmon with salt, dill, oregano, and pepper.
- Heat half of the olive oil in a skillet over medium-high heat. Sear the salmon pieces for about 2 minutes on each side until golden brown and cooked through.
- In a large mixing bowl, combine cooked quinoa, kale, red onion, olive oil, lemon juice, salt, and pepper.
- For the salsa, mix avocado, parsley, capers, feta cheese, lemon zest, lemon juice, olive oil, salt, and pepper in a bowl.
- Spread a layer of Greek yogurt on each serving plate, top with quinoa-kale mix, then add the seared salmon, and spoon over the salsa.
