Salmon & Quinoa Power Salad with Lemon-Feta-Avocado Salsa

Ingredients

  • 1 lb salmon skin removed, cut into cubes
  • 0.5 tsp salt
  • 1 tsp dried dill
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper
  • 0.5 tbsp olive oil
  • 3 cups cooked quinoa
  • 1 cup kale finely chopped
  • 0.33 cup red onion finely chopped
  • 1 tbsp olive oil
  • 0.5 lemon lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 avocado ripe, chopped
  • 2 tbsp fresh parsley chopped
  • 0.5 tbsp capers chopped
  • 0.33 cup feta cheese crumbled
  • 1 tsp lemon zest
  • 0.5 lemon lemon juice
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup Greek yogurt for serving
  • 0 fresh dill for garnish
  • 0 tahini optional
  • 0 pistachios optional

Instructions

  1. Cut the salmon into bite-sized cubes and transfer to a bowl.
  2. Season the salmon with salt, dill, oregano, and pepper.
  3. Heat half of the olive oil in a skillet over medium-high heat. Sear the salmon pieces for about 2 minutes on each side until golden brown and cooked through.
  4. In a large mixing bowl, combine cooked quinoa, kale, red onion, olive oil, lemon juice, salt, and pepper.
  5. For the salsa, mix avocado, parsley, capers, feta cheese, lemon zest, lemon juice, olive oil, salt, and pepper in a bowl.
  6. Spread a layer of Greek yogurt on each serving plate, top with quinoa-kale mix, then add the seared salmon, and spoon over the salsa.
