Spring Cacio e Pepe Ravioli with Crispy Prosciutto

Ingredients

  • 5 slices prosciutto roughly chopped
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 sweet onion finely diced
  • 0.25 tsp red pepper flakes
  • 0.25 tsp salt
  • 1 cup frozen peas
  • 0.5 cup reserved pasta water divided
  • 2 packs Trader Joe’s Cacio e Pepe Ravioli
  • 0.5 cup parmigiano finely grated
  • 0 flake salt to taste
  • 0 fresh cracked pepper to taste

Instructions

  1. In a skillet over medium heat, cook the prosciutto until crispy, about 5 minutes.
  2. Add butter and olive oil to the skillet with the crispy prosciutto.
  3. Add diced onion, red pepper flakes, and salt to the skillet, cook until onions are soft and translucent, about 5 minutes.
  4. Stir in frozen peas and cook until heated through, about 2 minutes.
  5. Add reserved pasta water from the cooked ravioli to the skillet, using a total of 1/2 cup in stages.
  6. Gently add the cooked Trader Joe’s Cacio e Pepe Ravioli to the skillet, and toss to coat with the sauce.
  7. Stir in crispy prosciutto and finely grated parmesan cheese. Add more reserved pasta water if necessary.
  8. Finish with a sprinkling of flake salt and fresh cracked pepper before serving.
