Giant Strawberries & Cream Sweet Roll
A giant, plush sweet roll with a perfect balance of strawberry and cream flavors, filled with fresh and freeze-dried strawberries, and wrapped with luscious strawberry rhubarb jam. Topped with a cream cheese icing, it mirrors the beauty of a blooming rose.

Ingredients
- 0.75 cup warm milk
- 1 tbsp granulated sugar
- 2.5 tsp instant yeast
- 1 egg
- 0.33 cup salted butter very softened
- 3 tbsp granulated sugar
- 2.5 cups bread flour
- 0.5 tsp salt
- 1 oz freeze-dried strawberries crushed
- 0 flour for dusting
- 0.75 cup strawberry jam
- 1 cup fresh strawberries chopped
- 0.33 cup heavy cream
- 6 oz cream cheese
- 0.33 cup butter softened
- 1.5 cups powdered sugar
- 2 tsp vanilla extract
- 0 freeze-dried strawberries garnish
Instructions
- Pour the warm milk into a large bowl or the bowl of a stand mixer. Add 1 tablespoon of the granulated sugar and sprinkle the yeast over top. Stir and allow to sit for 3-5 minutes, until frothy.
- Add the egg, 1/3 cup of very softened butter, and the remaining sugar. Mix until well combined.
- Add the bread flour, salt, and crushed freeze-dried strawberries. Mix until just barely combined, then allow to rest for 5 minutes.
- Knead the dough on a floured surface for 5-7 minutes until it becomes smooth and elastic. Let it rise in a greased bowl, covered, for 30 minutes or until doubled in size.
- Roll the dough out into a 15x12” rectangle on a floured surface and spread the strawberry jam evenly, followed by sprinkling the chopped fresh strawberries. Roll and form the sweet roll as directed.
- Allow the coiled dough to proof, loosely covered, in a warm spot for 45 minutes until puffy. Warm the heavy cream and pour it over the sweet roll before baking.
- Preheat the oven to 350°F and bake the sweet roll for 30-35 minutes until golden brown. Meanwhile, prepare the cream cheese icing by beating the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Let the sweet roll cool in the pan for 10 minutes, then spread the cream cheese icing over it. Garnish with additional crushed freeze-dried strawberries if desired before slicing and serving warm.
