Sweet Potato Cobbler

Ingredients
- 3.75 cups all-purpose flour
- 1 tbsp granulated sugar
- 1.5 tsp kosher salt
- 1.5 cups unsalted butter cold, in cubes
- 0.5 cup cold water
- 3 pounds sweet potatoes peeled and diced
- 2.25 cups light brown sugar
- 1.5 tbsp cornstarch
- 0.5 tsp kosher salt
- 0.5 tsp ground cinnamon
- 0.25 tsp ground nutmeg
- 1 cup fresh orange juice warm
- 1 tsp orange zest
- 2 tsp vanilla extract
- 0.33 cup unsalted butter
- 0 pie dough
- 1 large egg beaten with 1 tsp of water
- 0 ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the flour, sugar, and salt for the crust. Add in the cold butter cubes.
- Gradually add cold water to the flour mixture, mixing until dough forms. Wrap and chill the dough for at least 30 minutes.
- Meanwhile, in a pot over medium heat, combine diced sweet potatoes, brown sugar, cornstarch, salt, cinnamon, nutmeg, and warmed orange juice.
- Stir in the orange zest, vanilla extract, and butter. Cook for 5-7 minutes until the mixture thickens.
- Roll out the chilled pie dough to fit over the baking dish.
- Pour the sweet potato mixture into a greased baking dish and cover with the dough. Brush with beaten egg and sprinkle with ground cinnamon.
- Bake in the preheated oven for 50-60 minutes or until the crust is golden brown and the filling is bubbling.
