Chimichurri Steak Bites Over Mashed Potatoes with Garlic Lemon Broccolini

Ingredients

  • 2 piece NY strip steak cut into 1-inch cubes
  • 0 to taste salt
  • 0 to taste black pepper
  • 0 to taste garlic powder
  • 1 tsp olive oil
  • 3 tbsp chimichurri sauce
  • 0.5 cup parsley chopped
  • 0.5 cup cilantro chopped
  • 0.25 cup onion diced
  • 2 tbsp red wine vinegar
  • 0.25 cup olive oil
  • 0.5 tsp coarse salt
  • 0.5 tsp pepper
  • 0.5 tsp oregano
  • 0.5 tsp red pepper flakes
  • 2 large russet potatoes
  • 0 to taste salt
  • 0.25 cup milk
  • 0.5 tbsp butter
  • 1 tsp chives
  • 0 to taste pepper
  • 1 tsp olive oil
  • 2 cloves garlic minced
  • 8 oz broccolini
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 0 additional chimichurri optional

Instructions

  1. Cube 2 NY strip steaks into 1-inch pieces. Season with salt, pepper, and garlic powder.
  2. Heat 1 tsp olive oil in a cast iron skillet over medium-high heat. Cook the steak cubes for 2-3 minutes on each side.
  3. Turn off heat and stir in 3 tbsp chimichurri sauce to coat the steak pieces.
  4. To make chimichurri, mix 1/2 cup chopped parsley, 1/2 cup chopped cilantro, 1/4 cup diced onion, 2 tbsp red wine vinegar, 1/4 cup olive oil, 1/2 tsp coarse salt, 1/2 tsp pepper, 1/2 tsp oregano, 1/2 tsp red pepper flakes.
  5. Peel and dice 2 large russet potatoes into 1-inch pieces. Boil in salted water until fork tender.
  6. Drain water and add potatoes back into the pot. Add 1/4 cup milk and mash. Stir in 1/2 tbsp butter, 1 tsp chives, salt, and pepper.
  7. Heat a medium skillet over medium heat and add 1 tsp olive oil. Add minced garlic and sauté for 30 seconds, stirring constantly.
  8. Add 8 oz broccolini and toss to coat in the garlic-infused oil. Cook for 3-4 minutes, stirring occasionally, until bright green and slightly tender.
  9. (Optional) Add 1 tbsp water and cover for 1-2 minutes to soften the broccolini stems.
  10. To assemble, top the mashed potatoes with steak bites and additional chimichurri. Garnish with chives and serve with broccolini.
