Spicy Lamb, Mint & Feta Kebabs
Juicy and spicy lamb kebabs with refreshing mint and rich feta cheese, prepared on a sheet pan in just 15 minutes. Perfect for a quick and delicious meal.

Ingredients
- 21.2 oz Lamb mince 15%-20% fat
- 1 small Red onion grated, liquid discarded
- 1 tbsp Tomato puree
- 0.25 cup Feta cheese crumbled
- 2 tbsp Mint finely chopped
- 0.25 cup Parsley finely chopped
- 1 tbsp Garlic minced
- 2 tsp Smoked paprika
- 0.25 tsp Ground black pepper
- 0.5 tsp Cayenne pepper
- 0.5 tsp Chili flakes
- 1 tsp Salt
- 0 Lamb kebab mixture prepared and chilled
- 0 Cooking oil for greasing and drizzling
- 0 Flatbreads to serve
- 0 Sauce to serve
- 0 Salad to serve
Instructions
- In a large bowl, add the lamb mince, grated red onion (strained), tomato puree, crumbled feta, mint, parsley, minced garlic, smoked paprika, ground black pepper, cayenne pepper, chili flakes, and salt. Mix well to combine.
- Cover the mixture and refrigerate for at least 4 hours or overnight. Remove from the refrigerator 30 minutes prior to cooking.
- Preheat the oven to 220°C (428°F). Grease a baking tray/sheet pan.
- Spread the mixture evenly on the tray, divide into 6 long kebabs using a flat-sided kitchen tool. Make shallow indents along the kebabs and give a light spray or drizzle of oil.
- Cook on the middle shelf for 10 minutes, then move to the top shelf and grill/broil for 3-4 minutes on maximum temperature.
- Remove from the oven, let cool slightly, then drain any excess oil. Serve with flatbreads, sauces, and salads.
