Baked Feta Turkey Meatballs & Quinoa
This one-pan meal features turkey meatballs baked with feta and datterino tomatoes to create a creamy sauce, served over quinoa. It's a balanced, easy-to-make dish perfect for a quick dinner or meal prep.

Ingredients
- 1 lb ground turkey
- 1 egg
- 1 cup spinach chopped
- 2 tbsp parsley finely chopped
- 0.5 cup white onion finely chopped
- 2 cloves garlic grated
- 0.33 cup breadcrumbs
- 0.25 cup parmesan cheese
- 0.5 tsp salt
- 0.25 tsp black pepper
- 14 oz canned datterino tomatoes
- 5 oz feta cheese
- 2 tbsp olive oil
- 0 salt to taste
- 0 black pepper to taste
- 0.75 cup quinoa dry
- 0 parsley for garnish
- 0 basil for garnish
Instructions
- In a large mixing bowl, combine 1 lb of ground turkey, 1 egg, 1 cup chopped spinach, 2 tbsp finely chopped parsley, 1/2 cup white onion (finely chopped), 2 garlic cloves (grated), 1/3 cup breadcrumbs, 1/4 cup parmesan cheese, 0.5 tsp salt, and 0.25 tsp pepper to make the meatball mixture. Transfer to the fridge to stand for 10 minutes.
- Preheat the oven to 400°F (200°C). In a rectangular baking dish, pour in a 14 oz can of datterino or baby roma tomatoes.
- Scoop the meatball mixture into 10-12 balls, about slightly larger than a golf ball, and use your hands to form into meatballs. Transfer them to the baking dish, securing in the sauce and leaving space in the center for the 5 oz block of feta.
- Place the feta in the center of the dish then drizzle over 2 tbsp of olive oil and a generous pinch of salt and pepper. Bake for 28-30 minutes until meatballs are browned and cooked through and feta is melted.
- Meanwhile, prepare 0.75 cup of dry quinoa according to the package instructions. Turn off the heat and let it stand on the stove until ready to use.
- Broil the baked dish for 1-2 minutes to give the meatballs a slight crust. Remove from the oven, and stir the feta into the tomatoes creating a creamy sauce, then stir in the quinoa to combine. Taste and season with salt and pepper as needed. Garnish with fresh parsley and basil and enjoy!
