Healthy Vegan Date Walnut Cake
A delicious and healthy vegan cake made with wholesome ingredients like dates and walnuts, topped with a sweet tahini maple drizzle.

Ingredients
- 1 cup Medjool dates pitted
- 1.333 cup Almond milk
- 0 Date and milk mixture soaked
- 0.667 cup Oat flour
- 0.25 cup Coconut oil melted
- 0.25 cup Tahini
- 2 tsp Baking powder
- 2 tsp Cinnamon
- 0.5 tsp Salt
- 0.25 cup Walnuts chopped
- 0 Cake batter prepared
- 0 Parchment paper
- 0.25 cup Tahini
- 2 tsp Maple syrup
- 0 Tahini maple syrup prepared
Instructions
- Heat the milk in a saucepan until warm, then soak the pitted dates in the milk for at least 30 minutes.
- Blend the soaked dates and milk mixture into a smooth paste using a blender or food processor.
- Combine the date paste with oat flour, melted coconut oil, tahini, baking powder, cinnamon, salt, and chopped walnuts in a mixing bowl.
- Pour the batter into an 8x8 inch square cake tin lined with parchment paper and smooth the top with a spatula.
- Bake in a preheated oven at 350°F (177°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, mix tahini and maple syrup together. Add a splash of water to loosen the drizzle if necessary.
- Allow the cake to cool in the tin for 10 minutes, then remove it and let it cool completely on a wire rack. Drizzle the tahini maple syrup over the top before serving.
